There's a lot of misinformation about fat out there. Even most of the "experts" have their facts wrong. Read this book and get your information from a real expert. Dr. Enig is an internationally
known researcher specializing in fats and oils. She got frustrated by all the errors and ignorance and decided to set the record straight. For example:
The only really "bad" fat is trans fat, also called hydrogenated oil.
Saturated fats are actually healthy. (Surprise!)
Coconut oil/butter contains lauric acid, which is antimicrobial. In other words, it kills germs and helps you fight infection.
Lard is actually only 40% saturated fat. It's half monounsaturated like olive oil, and 10% polyunsaturated.
Never cook with canola oil or corn oil or any other mostly polyunsaturated oils. They break down and become dangerous. Choose olive oil, tropical oils, or animal fats instead.
